Wine By The Glass (WBTG) is age old in Italian tradition, and still is popular in today’s culture. In all towns and villages throughout the region it is commonplace to see people sipping a glass of wine together. This tradition comes from the Roman times.
From Italy and Europe at large, wine followed all immigration waves and it happened that only bottled wines could afford the one-way travel to the US. No keg could be brought because they were in steel and the cost to ship them back for refilling is too big.  The WBTG industry and business has never been feasible for Italian wines, or any imported wines to the US because the costs associated with the production of steel kegs and shipping empty kegs back across the Atlantic Ocean rendered the WBTG business unsuitable for Italian/European/Imported wines into the US.
Today the bottle is no longer the only way to contain and distribute quality wine in public places because the continuous opening and closing of the itself exposes the wine to light, temperature variation and oxigen. These factors are quickly altering the taste.
Today’s technology changed the dynamic. The use of modern PET kegs and the tapping method allow the distribution of excellent products at competitive prices, getting new customers and consumers. Kegs are recycled locally.  In comparison with bottled wines, the savings on transport can run to 85%. It also lowers CO2 emissions, and the use of compressed air reduces CO2 emissions even more. Also, restaurants do not need harsh chemicals for intensive cleaning, as you do with steel kegs.

A 20-liter keg is a common size and replaces 27 glass bottles, corks, capsules, carboard boxes and labels. A single restaurant moving about 120 cases of wine per month is going to avoid the use of about 17,000 bottles per year, which translates into 8 tons of glass waste alone with related financial and environmental costs.
